Roasted Farmers' Market Root Vegetables
variety of beets
variety of carrots
2 shallots
baby potatoes
2 tablespoon olive oil
sprigs of rosemary and thyme
salt and pepper
1. Preheat oven to 375F.
3. Slice into uniform pieces.
4. Place beets into shallow baking dish.
5. Quarter shallots and place into baking dish with beets.
6. Wash and chop carrots into pieces of similar size to the beets, add to baking dish.
7. Slice potatoes in half and place in baking dish.
8. Add herbs to shallow baking dish.
9. Drizzle with olive oil, salt and pepper.
10. Place baking dish in oven and roast for 30 minutes...toss veggies at the halfway point.
½ cup chicken stock
1 cups wild blueberries
1 tablespoon balsamic vinegar
salt and pepper
1. Pour chicken stock in saute pan, bring to the boil.
2. Add blueberries, simmer until they being to pop.
3. Add balsamic vinegar, salt and pepper.
4. Simmer until sauce thickens and blueberries are softened.
5. Ladle the sauce over grilled chicken breast.
As back to school arrives and our lives get a whole lot busier, it is easy to skip the trip to the farmers' market. But, don't forget that those farmers are growing delicious and healthy fruits and vegetables all year 'round. We love those cool fall trips to the market, when we are inspired by the food we see.

Wow this sounds wonderful - we love roasted vegetables and the different ones you can find at the farmers markets. The chicken sounds delicious as well - mixing poultry and berries isn't something I would have thought of doing but it's got my mouth watering.

Awsome post and pics! I'm in Heaven! We get many of our veggies from two local family farms (one is a CSA, the other has a Farm Store). The third one delivers (it's called Farm Fresh to You). We have not made anything as yummy looking as yours! Although we did make a stew in the crockpot with local beef stew from the farm store, and lots of root veggies! Darn! I should have taken pictures! And this summer we started working on edible plants in our yard, next year raised beds! I could go on and on but I won't... OK, one last thing, I just read The Dirty Life: A Memoir of Farming, Food, and Love. LOVED IT! Oh, and I have some new gardening Pinterest boards, I will shoot an invite!
