Did your mom make you chocolate pudding when you were a kid? Was it from a box or made from scratch? My mom always made ours from a box. It was okay, acceptable. I had no idea how great pudding made from scratch could be. I also would never have guessed that pudding could be made with anything but cow's milk. However, a few weeks ago I was invited to a cooking event with Silk the makers of Silk Soymilk and Almondmilk. A group of foodies and food bloggers got together to bake with Silk products. It was a super fun night and I discovered that it is really easy to substitute Silk Soymilk and Almondmilk in everyday baking recipes. By the end of the night I had enjoyed muffins, hot chocolate, chocolate cinnamon cake, truffles and chocolate pudding. What a night! All of the food was fabulous. It was the pudding that I totally fell in love with. It tasted a thousand times better than any pudding I had ever eaten before. I had a pretty good feeling that my daughters and my husband were going to fall in love with the chocolate pudding too.
Silk Chocolate Pudding
⅓ cup unsweetened cocoa powder
¾ cup sugar
¼ teaspoon salt
¼ cup cornstarch
3 cups chocolate soy milk
3 tablespoon butter (or margarine)
1 ½ teaspoon vanilla
1. Sift together cocoa, sugar, salt and cornstarch. Pour into a large saucepan.
2. Slowly whisk Silk chocolate milk into the cocoa mix, until combined.
3. Bring mixture to a boil, over medium heat, whisking constantly.
4. Once the mixture comes to a boil, reduce the heat to low and simmer until pudding thickens...about 5-8 minutes.
5. Remove from heat and whisk in butter and vanilla.
6. Pour pudding into individual ramekins or large serving bowl. Place in fridge and cool completely...about 1 hour.
This pudding is so smooth and delicious. My youngest daughter said that it was amazing! The best thing about it was that the chocolate pudding wasn't overly sweet and the chocolate flavour has the perfect richness. I am really looking forward to baking the chocolate cinnamon cake next.
