We've shared all kinds of awesome Easter fruit platters and I've been wanting to make an Easter egg fruit platter for a while now. In particular, I wanted to make an Easter egg fruit pizza. I've seen many different designs online and I wanted to see if I could come up with a fun combination of cookie, fruit, and delicious fruit spread too! I think I nailed it, what do you think?

Easter Egg Fruit Platter
sugar cookie mix
½ cup vanilla yogurt
¼ cup cream cheese
2 tablespoons strawberry jam
strawberries
blueberries
pineapple
green grapes
raspberries
blackberries
Start by baking a large Easter egg sugar cookie. For this, I decided to use a ready-to-mix sugar cookie mix. I've never used one of these before, but I wanted to give it a try. Start by drawing a large egg shape on a sheet of parchment paper. Then press the cookie dough into the cookie shape. Use a sharp knife to cut around the egg shape.
The cookie will spread as it bakes don't fill the cookie sheet completely, leave at least an inch edge around the cookie. Bake according to instructions. I ended up baking my cookie for about 15 minutes - longer than would be needed for regular sized cookies. Set the cookie aside to cool and harden completely.
Next, prepare the yogurt spread. Combine yogurt, cream cheese, and jam in a bowl and use an immersion blender or actual blender to fully mix. Then pour the spread into a small bowl.
When the cookie is cooled it is time to decorate! Use a spoon and offset spatula to spread the cream cheese yogurt dip over the cookie. Then have fun decorating with your fruit. I started with the pineapple slices. I loved making a fun garland with pineapple slices. Alternating the blackberries adds a triangle design to the cookie. The half-moon strawberries create a cool pattern as well. Have fun. Be creative and see what designs you come up with. The possibilities are endless.
This is when you can be totally creative and go with whatever fruit you have on hand. I was going for more of a mixed berry vibe, but a citrus covered cookie pizza would be lovely too. Orange segments and grapefruit segments would work. If the fruit is very juicy, I recommend dabbing off any excess moisture on a paper towel before placing it on the cookie pizza.
How long will a fruit cookie pizza last?
Honestly, this does not keep for a long time once it's assembled. It is a "make-and-eat" situation. The moisture in the spread and fruit will soften the cookie. I popped mine in the fridge immediately after making it and that did help. But, it is best to make this and then serve it.
