Chewy Glittering Ginger Cookies

A recipe for a deliciously chewy ginger cookie that glitters with a crust of sugar.

Ingredients

  • ¾ cup unsalted room temperature butter
  • 1 cup granulated sugar
  • 1 large egg
  • ¼ cup light cane syrup
  • ¼ cup finely chopped crystallized ginger
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 tablespoon ground ginger
  • ¼ teaspoon ground cloves
  • ¼ teaspoon allspice
  • ½ teaspoon salt
  • ½ cup turbinado sugar

Instructions

  • Cream together butter and granulated sugar in a large bowl of an electric mixer.
  • Mix in egg and syrup, until combined.
  • Stir in the crystallized ginger.
  • In a medium bowl, whisk together flour, baking soda, cinnamon, ginger, cloves allspice and salt.
  • Add flour mixture to wet ingredients ½ cup at a time...until dough forms.
  • Wrap dough and refrigerate for at least 2 hours...it can be frozen for up to 1 week..simple defrost in the fridge for an hour before using.
  • Pour turbinado sugar in a shallow bowl, or on a plate. Roll 1 teaspoon scoop of dough into a small bowl and then roll in the sugar, until completely coated.
  • Place cookie balls onto a parchment-lined baking sheet, spaced about 1" apart...they do flatten and spread while baking.
  • Bake in a 350F oven until edges are golden brown...about 12-14 minutes.
