Homemade Granola and Yogurt with Fresh Fruit Parfait

Ingredients

  • 5 cups of old fashioned oats large flakes
  • 1 cup whole wheat flour
  • 1 cup slivered almonds
  • 1 cup roasted pumpkin seeds unsalted
  • 1 cup shredded coconut unsweetened
  • 1 cup flax seed ground
  • 1 cup wheat germ ground
  • 2 tablespoon vanilla
  • ¼ cup water
  • 1 tablespoon cinnamon
  • cup oil we use sunflower oil
  • ½ cup honey
  • plain yogurt
  • fresh seasonal fruit

Instructions

  • In a large bowl, combine dry ingredients together (oats, flour, almonds, pumpkin seeds, coconut, flax, wheat germ and cinnamon).
  • In a small bowl, whisk together wet ingredients (vanilla, water, oil and honey).
  • Pour wet ingredients into bowl of dry ingredients. Stir until dry ingredients are moistened
  • Spread granola on parchment paper lined baking sheets. Spread in a thin layer, ¼″ thick.
  • Bake in 250°F oven for 2 hours.
  • After 2 hours, remove from the oven, let cool and store in an air tight container for up to 2 weeks.
