Seasonal Peach Salad with Goat Cheese

A delicious fresh salad using seasonal peaches, goat cheese and a balsamic vinaigrette.

Ingredients

  • 4 fresh peaches peeled and cut into wedges
  • 4 ounces herb coated goat cheese
  • 1 small head of leafy green lettuce
  • 1 tablespoon balsamic vinegar
  • 1 ½ tablespoon olive oil
  • salt and pepper to taste

Instructions

  • Whisk together balsamic vinegar, olive oil, salt and pepper.
  • Dress the lettuce as you like.
  • Combine peaches and goat cheese in a separate bowl, lightly dress with vinaigrette and toss.
  • Place lettuce on serving dish and scoop peaches and goat cheese on top.
  • Serve
