3 ½poundbeef brisket
For the BBQ Sauce
1 ½cupketchup
½cuppacked dark brown sugar
½cupwater
¼cupfinely chopped shallot
3tablespooncider vinegar
3tablespoonworesetshire sauce
2chipotle chiles in adobo saucediced
1teaspoongarlic powder
½teaspoonground pepper
For the Brisket Rub
1tablespoonpaprika
1tablespoonchili powder
1tablespooncumin
1tablespoondark brown sugar
1tablespoonkosher salt
1teaspoongarlic powder
½teaspoonground pepper
Instructions
For the BBQ sauce
Pour all the BBQ sauce into the bottom of the crock pot, stir to combine.
For the brisket dry rub
Combine all the dry rub ingredients in a large bowl, stir to combine.
Slice the beef brisket in half...so it fits easily into the slow cooker.
Place the brisket in the bowl with the dry ingredients and evenly coat the brisket with the dry rub.
Place the coated brisket into the slow cooker. Cover and cook, on low, for 10 hours.
After 10 hours, remove the brisket and place in a large baking dish. Using 2 forks, pull apart the beef. Or, slice the beef into thin slices.
Allow the BBQ sauce to sit and then use a large spoon to remove the fat from the top of the sauce.
Return the beef to the crock pot and stir in the sauce.
