TASTY LEFTOVER TURKEY HAND PIES

A fabulous way to use up those turkey dinner leftovers - bake flavourful turkey hand pies.

Ingredients

  • ½ cup chopped celery
  • ½ cup chopped carrot
  • ½ – 1 cup chopped toasted turkey
  • ½ cup chopped apple
  • ½ cup shredded cheese
  • ¼ teaspoon dried thyme
  • 1 sheet ready made puff pastry
  • ¼ cup all purpose flour
  • 1 large egg

Instructions

  • Combine chopped celery, carrot, apple, turkey and thyme in a bowl – toss and set aside.
  • Roll out sheet of puff pastry on a floured surface. Use a sharp knife to cut the the pastry into 4 large squares.
  • Pile ¼ of the veggie and turkey mixture and shredded cheese in one corner of the puff pastry square.
  • Use your fingers (or pastry brush) to coat the edge of the puff pastry, around the filling.
  • Fold one half of the square over the filling, to create a triangle. Pinch the egg edge together. Fold in any excess pastry. Cut a single slit in the top of the pastry triangle. Place the pies on a parchment paper lined baking sheet.
  • Brush the remaining egg over the pastry and sprinkle with salt and pepper.
  • Bake in a 400°F oven for 20-25 minutes…until the pastry is golden and puffy.
